Dock Street Beer Ain't Nothing To Funk With – ABV 7%
We're all a product of our environment; we react consciously and subconsciously to countless stimuli on the regular. There's the obvious: temperature, light exposure, atmosphere; and the more complicated: rhythm, tempo, volume, etc. Beer is no different. To test this theory, we didn't funk around. This Golden Saison made its way into a red wine barrel in a cool section of the brewery where the only sounds to be heard for six months were from a 24/7 loop of Wu Tang Clan’s music via custom-fit, house-made ‘headphones.’ The addition of Brettanomyces B & C (these are wild yeast strains not new clan members) changed the game with a new level of tart and funk. Just like Wu-Tang Clan flipped hip-hop on its head, we want to challenge the way craft beer is made and appreciated. Depending on who you ask, we're either stimulating or serenading this beer with the sounds and vibrations of hip hop's most iconic ensemble. We lean towards the latter.

Former brewer B to the P (Ben Potts) took the Rye IPA for a ride and fully pimped it out for Philly Beer Week. 4 different types of Rye - Malted, Toasted, Crystal and Chocolate - bring up the percentage of rye in the grist from 20% to just under 25%. Dextrose and brown sugar were added in the kettle to turbo-boost gravity while lightening the body. Then, thi bad boy sat on 22’s for the boil - that is, 22 lbs of a blend of Simcoe and Amarillo hops for flavor and aroma. It was then fermented with our lager yeast to really let the malt and hops glean like freshly polished chrome on a sunny summer day. Finally, this crazy beer was dry-hopped with Columbus and Simcoe hops in the lagering tank. Like the beer's namesake show, once the party's over, we're taking all this with us and you're back to your old hoopty beer, so drink up.
Pre-Prohibition American Pale Ale – ABV 6%
This American Pale Ale mimics those of yesteryear (or yester-century). Straw in color and big in flavor and intensity, it was aged on 2 lbs of light American wood chips and 1 lb of dark American oak chips to call to mind a barrel aged feel, and then dry hopped with Cascade and Crystal hops.
Prince Myshkin’s Russian Imperial Stout – ABV 9.5% 71 IBUs
Pours a deep, opaque, midnight-black, with a dense milk colored head. Brewed with a large percentage of roasted and chocolate malts, this huge beer is then aged on oak chips for added depth and complexity. Flavors are reminiscent of dark fruits, chocolate and sandalwood, making Prince Myshkin’s Stout perfect for dessert, or a dangerously smooth nightcap. "But who's Prince Myshkin," you may be wondering? He's the Idiot-Sauvant from Dostoyevsky's novel, The Idiot, who the Russian writer described as "entirely positive... with an absolutely beautiful nature".
This straw-colored ale tempts with a robust aroma of tropical fruits, floral hops, and doughy malt. Flavors of bubblegum, herbs and spice, and a slight tartness make this devilish beer dangerously drinkable. A dose of black, white, and green peppercorns create a spicy finish that builds as you continue to sip.

They were soon swayed by Philadelphia's strong desire for porters and began to brew this style with lager yeast. We brewed this beer with those first beer loving immigrants in mind. Dark brown to almost black in color, Teuton Porter is crisp and smooth with notes of chocolate and a touch of coffee. A bright alternative for winter drinking!
