WILD WEST SERIES: KING JUICE
ABV 8.9% - For 19 months we aged the base for one of our house Double IPAs, King Juice, in stainless steel with a house-cultured blend of Brettanomyces until the beer was transformed into something entirely different. We then dry hopped heavily with Mosaic, Amarillo, and Ekuanot to compliment the aromas and flavors contributed by the Brett. The resulting beer is an indulgent wild ale, not overly tart but significantly funky with bold aromas of a strawberry-mango-pineapple smoothie and flavors of capri-sun summers and overripe fruit funkiness.

4.7% 15 IBU - Hibiscus Pale Ale - This lightly hopped pale ale was conditioned on a significant amount of hibiscus, which contributes a dramatic pink appearance that extends even to the pinkish white head. Amarillo, Cascade, and Centennial hops combine with the hibiscus to create a delicate, floral aroma. Slightly sweet, dry but not bitter, and easy drinking.

5.2% ABV 30 IBU - Brown Porter - A liquid nod to the only pre-revolutionary tavern still standing in The City of Brotherly Love. “Man Full of Trouble” was one of Colonial Philadelphia’s first watering holes. This London Style Porter was brewed with “Old-World” in mind. Black and chocolate malts create its deep mahogany appearance and creamy espresso-like flavor. A blend of hops lends a delicate earthy presence.

After all these years, Dock Street can still turn it on. Proof: Dock Street Cannery, a tiny, lounge-y bar built inside a small garage space on the backside of the brewpub where the cocktails are smart and refreshing, the beers are, you know, Dock Street and great, and the bar itself is an easy place to while away an evening.
